AGED COFFEE

Just what is �aged� coffee?�� Is it simply old coffee?� Let�s answer this question with a question.� Is �aged wine simply old sour wine,�� Is old beef the same as �aged� beef?� Or what about� �aged� verses old cheese?� The answer is obviously no!� Why?� Because all of these have been� processed and kept in a controlled environment for selected periods of time, and now are considered �aged�, and not simply just old.

Here, at the Long Ears Hawaiian Coffee LLC, we have complete control of our coffee process from the freshly picked coffee cherries, to the final sealing of the bags.� A very high standard of quality control is maintained through out this entire process.� One of the steps that we have developed is the unique �aging method for our 100% Pure �Single Estate Aged� Hamakua Coffee.� Our own Misty Mountain Private Estate is a medium roasted coffee which has been �aged for 3 years, and is quite limited.

We have also developed a very unique and limited �aged pea berry�.� This is another of our Privated Single Estate, medium roasted coffee that has also been �aged� for 3 years.� Pea Berry grade coffee beans are considered to be the champagne of all coffees.� These small single instead of two flat bean, grow in less than 4% of all coffee cherries produced by each coffee tree, making the supply very limited.� The flavor in these small beans are simply more concentrated so the 100% Pure Single Estate �Aged Hamakua Pea Berry� effect will really get you.

As I was gettting this education on the �aging� process by a gentleman who well qualified to present this issue, and as he hugged his wife, he looked at me with a twinkle in his eyes and said �for this very same reason you can have an �aged� women, or you could have an �old� woman.� So, as can been seen it is all in the method of process.
